I know you don't read your comments Gordon, however I've just 'practiced' making rice and it turned out better than anticipated! 50g of rice and 150ml of cold water and I followed the method you described. You did say 8 to 10 minutes and I gave it 9. The result was extremely satisfactory and I combined it with some leftovers and have had a lunch with no waste. I know how to do the onion as my daughter has already shown me. I'm off out shortly to buy a steel as I usually sharpen my knife on a whetstone, which can be more of a chore than using a steel. I'm 61 and everyday is a schoolday.... I've so wanted to master rice:-) Cheers!

Steel isn't for sharpening, it's for maintaining an already sharp blade and having to use the stone less. When the edge chips or erodes away, only with a stone will you be able to get a new edge

Olive oil is fantastic at many things, but it does not prevent spaghetti from sticking together. Because it floats to the top of the water while the spaghetti is cooking in the water, having the oil there does nothing to prevent the pasta from sticking together while cooking. Furthermore, when you drain the water and oil away, a coat of oil is left on the pasta. Although this may not seem like a problem, the coating of oil prevents sauce from sticking to the pasta, making it difficult for the pasta to absorb the flavor of any sauce you put on it.

More popular in Japan, here in Mexico when it ends up like that we call it "arroz batido" which means its more humid and clumps together, as well as some of the grains get blown up (kinda) And then there's the more common well done steamed rice, I've done both so i know what I'm talking about.

Hi from 🇵🇱 I would like to share the advice that I heard as a child in a science program and that I still use today :) Onion doesn't irrotate the eyes- it irritates the receptors in the nose. When cutting an onion, just stop breathing through your nose, open your mouth and breathe through it, not through your nose- that's all :)

His 'secret' makes the clumpiest, gluey-est, nastiest rice I've had in years. (Althought I'm keeping the star anise / cardamom hack.) For a master chef, some of the techniques Gordon shares are suspect af. I have one of his cookbooks, in which, for Madras Curry, he calls for cooking chicken breast peices in the sauce for 40 mins. Well, that's a recipe for some ruined, overdone chicken. Why the disinfo?

I’ve spent a bit of time in England, just generalizing here, but I’ve noticed when they try to cook foods from other countries they leave out a lot of the spices that make the food unique. Perhaps they are diversifying the dish or they don’t think the exotic spices make a big enough difference to import? Originals are always better to me. 😎

Initially, I had the same thought, but if you think about it: there are people who don't like fish skin. There are also recipes where you might not be frying the fish up and therefore the skin would just be flabby and gross. In those cases, you can skin the fish, fry it up, and use it as a garnish. It's also a good "patience" skill which a lot of new cooks lack because they want to be able to do everything like a chef who has been cooking for a few decades.

And you don't salt the cold water, you add salt once the water starts boiling. Adding it to cold water is a great way to ruin the inside of your pot by causing it to pit on the bottom, especially if you are using a stainless pot to cook your pasta.

I watch out of respect for his craftsmanship. A lot of the shenanigans Ramsay gets into exploring the many facets of food and consumtion of food are very interesting. Under the yelling and anger in a professional environment I see he has a genuine and deep passion for food. Videos like these make me realize he wants everyone to know how to cook fine food for themselves, even the most amateur.

+kappa kappa Instructions unclear; dick stuck in old joke. As for rice, sometimes what I does is toss some frozen or canned peas and carrots in the water as the rice cooks. Add black pepper and either salt or creole seasoning. Once cooked, toss in some canned tuna, drained (my cat gets the liquid). Add mayo, mustard, soy sauce, perhaps some hot sauce, and stir well. It should have a fairly thick consistency thanks to the mayo and mustard. the colour will be mostly dominated by the mustard, giving it a yellowish look. Get a couple slices of bread, put on your condiments of choice (I typically use mayo and dijon mustard (normal mustard was mixed into the rice), then make a sandwich of it. Cheap, relatively simple, you've got some protein (quite a lot actually) from the tuna, and there's veggies in there which is good (don't want scurvy after all), but most importantly, I find it to be delicious. It's not something you'll see in one of Gordon Ramsay's restaurants of course, but it's welcome on my plate any day. Another version of this is to replace the rice with scrambled hardboiled eggs, do away with the tuna, replace the soy sauce with Worcestershire sauce (pronounced worse-tur-sure for anyone who's curious, I used to pronounce it war-chester-shire), and the veggies are optional. I typically go without.

@@SanguinaryStrife you don't sharpen serrated knives. You should only use a serrated knife to cut a cooked steak or something of that sort. When you use a serrated knife you go back and forth not up and down, for chopping an onion for example you would use a sharpened chefs knife.

I don't like to use rice cookers, and in most western cuisine we usually season the rice (I use salt and garlic mostly). But yeah, after some pratice you can "fell" the right amount of rice and water by just a glance. Also, when making asian food, sticky, unseasoned rice. For western food, this "flufy" he talks about in the video is how we like it.

I much prefer seeing this type of Ramsay, no swearing, passionate, to the point and genuinely useful and interesting. Makes his US TV shows look such a joke in comparison.
