@@ywlan Its so so different to study it and actually doing it, you can have that knowledge but once you are in front of a whole fish for the first time, you get very nervous, the books dont prepare you for the many many variables .5 fish in and your fear dissipates, 25 fish in you star gaining a little confidence.

@@NooBHunterXP Besides, it's not thrown away. When cutting sushi for example, you use the best parts for the nigiri, long uneven parts for maki and small parts for tartare. Nothing is ever lost in a salmon, just that as you practice, you get more "good" parts and fewer failed parts.

I'm going to try my peppers that way. I always found it quick to cut it into 4 large sections then just slice out the white with one cut per section. Same idea but his way might save me some time.

Apparently how calm he is is relative the what show hes doing\country its screening in (or rather made for). Basically when he going off at people constantly its for America, when hes halfway between drama and this its for UK\Europe, and here hes clearly just teaching so hes fully professional and to the point. Long story short - this man is not only a chef but an actor, hes good at what he does, but hes not above playing the crowd for the view count.

And the network and production staff have a lot of influence as well. It's a shame that we in the US crave melodramatics, so his US version of Kitchen Nightmares are so formulaic, it's tiresome to watch. In the original UK versions, you could tell that he was actually trying to help but had to break through the bad habits and particularly the egos of those at the restaurants (who'd asked him to come help), to break them down in order to build them back up. This was made plain in one UK episode with a restaurant in Paris operated by a spoiled young British woman using her parents money. She'd hired a young college student to be her lead cook, and Gordon saw the talent & potential in the cook while he taught her dishes to make for the restaurant, but had to argue with the owner over everything. The owner couldn't handle the pressure so she ended up closing the place and running home, leaving all the employees high and dry. Gordon showed up to keep filming to find the cook sitting on the front steps with nowhere to go. He ended up hiring her for one of his restaurants back in England. Throughout the episode, you could see his nurturing side because she was just soaking up everything he could teach her. There were many other episodes like that, where you knew he cared, but had to snap the owners or lead chefs or cooks out of their ruts. The American version is just drama for the sake of drama, or contrived plots -- like all of Bar Rescue.
