I appreciate that he acknowledged in the beginning that it could take the viewer over 10min to make one of his dishes. I’ve seen recipes where they say “you can do it in 5min for $1 so easy!!” and it’s all fine and dandy for the chef, but the learner may need to spend extra on ingredients or spend more time.

Yeah I totally agree. For example, in this video he used fresh pasta so I understand why it took only 3 minutes to cook, however the dry pasta that I buy usually takes 20 minutes to cook whereas it's written 8 to 9 minutes on the package.
