LOL So I'm not the only one thinking that... He already got the render fat from the pancetta + the fat from the olive oil (used to "speed up the process")... Why butter? And why so much? Today I made an easy pasta (tortiglioni) risottata with mortadella... I only used mortadella + pasta + water + parmigiano... the pasta got creamy even before the parmigiano was added. I love butter too, but damn too much is too much.

I mean, why wouldn't this dish Gordon made taste good...he basically put (like you said) 2 kgs of butter in it...geez! The dish would be delicious with only 1/3 or 1/4 of the butter he put in there. To me, that is just cheating when you overuse fatty flavorings in recipes. Yes, OF COURSE something's going to taste good when you use 2 kgs of butter or 2 kgs of bacon! The real magic of being a chef is to make dishes that won't clog arteries but taste good. I would make this dish but only use like 1/4 butter Gordon used & I probably wouldn't put in the pancetta (Italian bacon, basically), either.

This was absolutely inspiring...I just made a version of it right now for dinner. Except I used what I had on hand...bacon, peas, mushrooms, roasted red peppers, fresh parsley & garlic. And of course butter. And broth & pasta water and a bit of tomato sauce. Angel hair extravaganza. Delicious. Family loved it. I should have grilled some chicken breasts to serve with it, but who can think of everything? Thanks for this tasty inspiration, Gordan Ramsey!

I literally made it today and it is literally really good. I literally couldn’t find the cheese, and the store was literally out of fresh herbs and fresh chilli so I literally swapped them out for Parmesan and dried chilli/herbs and it was literally still literally really good. I would literally recommend you literally make it yourself.

Everyone saying he messed up on the peccorino, consider this: he says peccorino incorrectly and looks at it, then at the end he correctly says parmesan. He probably asked for peccorino and whoever shopped for the video messed up and he realized in the middle of filming but had to keep going.

Amazing...so fresh looking. Love it as an option for a veg dish. My go to for a late night arrival at home from work is a pasta and veg dish..this is perfect to not eat heavy late at night..I haven't done anything like this with the lettuce..but going to. Of course I use less butter and I finish it with some fresh grinded smoked black pepper to level up the bacon taste. The freshness of the lemon is gorgeous. Texture, taste, f***ing awsome! If you have a sunny window, grow your own herbs! Seeds are cheap at the dollar store as well has the pots. I ordered some seeds because by the time I found out about them selling gardening stuff it was too late lol. I now have basil, thyme, oregano, cilantro, a tiny Tim tomato plant and Thai chili peppers 😂😂 I live in NYC so I know this is doable for just about anyone. Look up Kratky for the cheapest way to grow. No soil needed just a jar and a window ❤

To all the commenters here complaining about the amount of butter being unhealthy; Real butter is good for you. It is healthier than margarine or seed oils (canola, safflower, corn, etc). It doesn't cause heart problems despite what youve been told all your life. Butter makes you feel full faster so you eat less. Check out Carnivore diets, Keto diets or the video "Butter Makes Your Pants Fall Off" here on YT. I have no connection to any of these.

Butter can be healthy. That doesn't mean eating an entire stick of it (That is about how much he used) is healthy. An entire stick of butter has 3 times the amount of saturated fat recommended for an adult per day, regardless of how "real" or "organic" the butter is. That is unbelievably unhealthy. Butter, in its existence, is entirely fat and milk solids. Eating that much of ANY kind of fat is not healthy.

I'm curious to know where this house is located if these are "household ingredients" because something like grapeseed oil, I've never even heard of, same with fresno chili, never seen it or heard of it.

Just use olive oil or canola oil and a basic red chili.

Grapeseed? Rapeseed lol, one of the most common oils there are.
