3:00 Gordon's thought process here is fascinating and shows exactly why he is different to the failing Chefs he criticises. First, he finds fault with their logic. "why are they putting the rice on when all of my experience and expertise is telling me that it only takes 20 minutes?". But instead of arrogantly assuming they were doing it wrong, he accepted that his knowledge is limited and that they know more than him and adjusted accordingly while attempting to seek out additional information to catch up with them.
