1. Preheat the oven to 355°F 2. stuffing- Heat a little olive oil in a large frying pan, add the chorizo and fry for about 3 minutes . Add the onion and cook for a minute or two until softened, then add the garlic. Cook for a further couple of minutes before adding the leaves from 3 thyme sprigs. Stir in the cannellini beans, seasoning well. Cook for a minute or two. Add the tomatoes and a couple of tablespoons of the oil they are stored in. Stir to combine, then remove from the heat..

He isnt trying to cook the oils away, oils cook out of spices, herbs and meats that are full of flavor, which he intends to utilize. Try simply putting fresh cracked pepper in a frying pan with hot olive oil, and watch the oils releasing out of the pepper, this is flavoring your oil....

I found it in my local grocery store. But I live in NYC so it's fairly easy to find, especially in my neighborhood. I think though; any good spicy sausage might work. Worth a try experimenting. Best to double the amount of the stuffing, because that is the first to go in our house. It's really a meal in itself. Very satisfying.

i actually thought it was weird to have the foil on in the 1st place. The chicken wont dry up without a cover especially with all the stuff inside + and water in the pan. I think it would have been fine just to bed it on some veg and skip the water all together

There is just NO WAY all that stuffing he made is going to fit inside even a big chicken. I tried, believe me; I could stuff no more than 5 heaping spoons max, and there still quite a bit left in the bowl before I could fit in a whole lemon. Anyone else had this problem?

How large was your chicken? I'm guessing you used a 2-4 lb broiler/fryer as opposed to about a 5lb roaster which his looks like. Besides, add some chicken/chickpeas/potato/kale/etc.+ water to the extra stuffing and you have a spanish style stew for the next day! You can sweat/cook the stuffing with rice for a nice pilaf, or bake it with old cubed bread for a side dish...

John Lee I've never tried, but I'm sure you can. I'd probably prepare the stuffing separately and put it in after the bird is cooked to make sure it's safe. I think a Cornish hen would make for a cool presentation.

Steamed first to ensure it's moist. Not even 30 seconds after, he then instructs to take the foil off so it can crisp up in the last half hour in the oven. I guess it's a roast chicken after all.

Uncle Ho, It has nothing to do with your attempt at an analogy. Roast is roast, steamed is steamed, whether you dry the skin after in a hot oven or not, it remains steamed. Pre cooked boiled ribs finished on a bbq, are just that, finished on a bbq. They are not bbq'd.

It's the filling that makes this chicken perfect for me. I've skipped adding water, and just added a touch of wine (much less than 400ml) and it's simply perfect. I'll never make it another way again.
