Gorele Pidesi, Crusty Black Sea Pide with Oozy Cheese and Egg

Today we are making a traditional Turkish pide which is my favorite pide in Turkey.
The word "pide" is believed to be deriving from "pita" which has been borrowed by Turkish as pide and is the name generally used for a boat-shaped Turkish pizza that is topped with meat and cheese and cooked until crispy.
Pide in Turkish cuisine has many varieties, such as this version from the east part of the Black Sea region and which has a round shape and has lots of melted, oozy cheese and a runny egg yolk in the center to dip your cheesy crust.

• 300 g 00 flour
• 200 ml water
• 2 tbsp vegetable oil
• 2 tsp sugar
• 5 g active dry yeast
• 2 tsp salt
• 250 g Turkish golot cheese (alternative: kashkaval (Turkish kasar) or dry mozzarella)
• 1 egg
• 20 g butter

The dough looks like it was very sticky as you were molding them into balls. This is something that is very interesting and unique to watch. First of all it is not a dish that I am familiar with, but of course I know of pizza, so it was really interesting to see how this dish gets prepared. I guess what is really neat with this dish is that you can create many different variants of it to suit your personal taste choice. This is not something that I have seen before so I found it very interesting, even though I'm not 100% sure about dipping cheesy dough into an egg 😂🍕🥚

Exactly, there are different toppings for Turkish pides and varies from region to region! This one is very similar to Georgian khachapuri and even probably inspired by it! For me, the best part of this is dipping the cheesy dough into the runny egg yolk 😁

It is just Turkish grammar, pide is the word itself, pidesi is used when used with an adjective or place before the word, just like Neapolitan Pizza in this case.

That's not a Turkish pie. That's called "Khachapuri". Look it up on Google. It's a Georgian boat shaped pastry.

I know Khachapuri and they are very similar to each other with Turkish "pide" ;) They probably share a common history since the hometown of this pide is east side of the Black Sea region, neighboring Georgia.
