This looks amazing and I’m so pleased to see nice comments in this thread as is unfortunately rare to see when it comes to fine dining😂 Wye Valley asparagus have become a household name in terms of quality for a reason when it comes to English produce specifically, standing up there with their many varieties of apples as well as rhubarb, to name a few examples. They are delicious! I also like how they utilized the bavarois technique to make the plate a bit more interesting. Furthermore, the brininess of the pecorino cheese and the buttermilk and the bracing, fermented acidity of the preserved lemon are all unique flavors high in umami that are different from your more conventional wines and stocks that make it into sauces and such that help balance plates out. This is a dish that, although seemingly simple in its composition, to me sends the message that the chef took quite a lot of time in creating it.
