Look at this! A crêpes soup. This is heresy, even more when you know the essential ingredient is not this british soup but the crepe itself. For the one not willing to buy this bs, just go to french bistrots in French britanny, they will serve you excellent and authentic crepes, salt and sweet, and at least twice much for the same price.

Heat degrades gelatine, while generating roasty flavours. If you want something deep and bold, you should roast the bones before simmering. If you want something clean and delicate, but with extra texture, you start from raw.

@@umairiqbal1852 again, it depends on your goal. If you want to make a velouté for a light dish, or gently poach fish in its own stock, yes. If you want to make a red wine pan sauce, cook potatoes to serve with beef or game, and many other applications, a deep demi glace is a better base. I don't like blanket statements in cooking, "this is better than that", it's always about matching and balancing flavours.

Oh yes, very nice indeed. Lots of savory/saline flavors going on here. There’s the dashi jelly, the trout cured in salt, the relish which is largely anchovy paste, etc. I’d be concerned about a lack of balance. The bread is a nice touch, the smokey sweetness of treacle is grounding. But concerning the plate itself, I’m not confident in a light coating of lemon oil being enough acidity to combat the salt. Although, I do see some more bits and pieces on the plate. Pickles, perhaps🤔🤷🏻‍♂️

Yeah, the rotisserie does seem a bit gimmicky. Could achieve quicker and better results cooking over proper coals. Food does look really good though.
