Growing up, sometimes my mother would surprise us, with an extra large pancake...spread with butter then strawberry jam...rolled up. One was all my tummy could hold. When she handed us our plates the pancake roll was sprinkled with powdered sugar...yum!

By the way, I use the Cuisinart Griddler Deluxe, which can make 8 to 10 pancakes at a time. One thing I have noticed, is you do not leave your pancakes cooking long enough on the first side. Pancakes should only be flipped ONE time. You really need to wait until the whole top is full of the bubbles, then flip and watch until done, usually 2 - 3 minutes. I am 69 and learned a lot from my granny over the years. She's gone now, but a lot of her methods I use in my own kitchen.

Just wanted to share that I had a wonderful experience with this recipe. Thank you for showing us how to successfully make pancakes with freshly milled wheat! I didn’t have any baking powder on hand, so I did not use it. I also subbed out 3 cups of raw milk clabber instead of the buttermilk and the usually very picky eaters in my home enjoyed them! They were a hit with us adults as well of course 😊 They also smell amazing as they’re cooking on the stove!!! I followed a tip I read in the comments section about waiting until the surface is covered basically fully with bubbles before flipping, and this helped me to get a consistent result while letting me only have to flip the pancakes once. I am new to working with freshly milled grains (or grains at all for that matter) so your video tutorials are immensely useful in helping me put quality nutrition that is enjoyable to eat on the table for the people I care about. Your yeast bread video has been life changing as well!!! Thank you very much for what you do. As a side note, this recipe made way too many pancakes for our family of four-so I’ll be attempting to freeze them and reheat them in the toaster. We’ll see how it goes!! 🤞

Thank you Felicia. Pancakes were delicious. I used soft white mixed with Kamut. You mentioned that batter could be kept for up to 3 days in fridge. I put batter in glass jar with lid and next day batter was thinner n didn’t rise so wasnt fluffy like first day. Do you know why that would be. I find that steaming pancakes kept in fridge heats them nicely without drying them out 3:36

What bread cookbook would you recommend when using fresh ground wheat?
@GrainsandGrit
@GrainsandGrit 3 жыл бұрын
I don't have any that I can say every recipe is 100% great. However, I do recommend the Bread Beckers Recipe Collection because it is a good start. I also know Sue Becker wrote an actual book about milling your grains and included some recipes in there, but I don't have the book thus I haven't tried any of the recipes :-)

I am really enjoying your videos and have been interested in switching to freshly ground grains. I would love your opinion regarding some of the reviews I am seeing on wheat from azure standard. I saw a few reviews that stated the bag of wheat berries was full of chaff and sticks and things like that. Has that been your experience? I really would want a wheat you don't have to figure out how to blow all that off.
@GrainsandGrit
@GrainsandGrit 2 жыл бұрын
I rarely have a problem with my Azure grains. The only one that I have seen stalks in is my hard red wheat, but it's very few. I have never had rocks or anything like that in my grains. The occasional time I see a small wheat stalk (it's less than an inch), I Just mill it up with my wheat berries or just take it out. I have NEVER had to sort through my wheat. I know other people have had different stories, but this has been my personal experience :-)

Felicia, newby question here When you make pancakes and muffins , cookies etc. do you mill the soft wheat on the pastry setting on the wonder mill?? I made cookies and they were a bit grainy hence the question.
@GrainsandGrit
@GrainsandGrit 2 жыл бұрын
My Wondermill is older, so there is no pastry setting. On mine, no matter what setting I put it on it's all fine flour lol I would just make sure you mill it finely. If you find a recipe too grainy, mill it finer the next time :-)
