I tried so many recipes ...I ended up using 2 1/2 c flour, 1 pkg rapid rise, 1 tsp salt. I found sugar had no real affect. 1 cup very warm water with 2 tbsp oil mixed in. Mix...knead in bowl 6 min adding flour til less sticky. Rise 10 to 20 min in bowl covered. Oil my 9 x 13 x 2 pan. Press out dough...shredded 1 lb mozz...three strips of sauce, add pepperoni or sausage or mushroom or mix. Pecorino and or Parmesan on top. Bake till browned and bubbly.....try it. Mine comes out super nice thick 2 inches! Detroit style pizza.

I don't know if it comes from Umbertos. My mother who is from Celano, Italy was making me something very similar at home when AI was a kid and we were never at Umberto's. I think the basics of that style are universal to the Abruzzo region of Italy, but I'm guessing. All I know is a lot of the Italian moms I grew up with in Rochester did a similar thing.

Newbie to your channel. I watched this video and was intrigued….I am 62 and have never made a pizza at home that was worth making again. Your instructions were so easy to follow, I decided to give it a try. Let me say, it exceeded my expectations! The dough was so easy and satisfying to make. Per instructions, I watched closely during baking. The pizza turned out perfectly crispy with just the right browning on the bottom. The pizza was delicious and my husband loved it as well! Since I have never found a good homemade pizza dough recipe, I have been guilty of getting a frozen pizza and doctoring it up. No more, this is now my go to pizza recipe! As others have said, I can’t believe I made it myself…..thank you so much 😊

I could have just eaten just the crust. My husband kept saying, "This is good, I mean really good. Do you know how good this is? it's really good" . We ate almost the whole pizza! Thanks again for the BEST recipes.
@SipandFeast3 жыл бұрын
Thanks very much! Just keep checking the bottom when you put it in and move it up right when it gets to the color you like. It's so hard to give an exact time for this. Also, if you have a coil at the bottom of your oven it's very important to let the oven preheat for along time and get the pizza in immediately. If the coil comes back on, it can burn the bottom quicker.

Try using my grandma's secret, coat the pan with crisco, works great, no snap back and still a golden crust. One and done.... If you want to let it rise after fine, or just cook it up either way, try it till be amazed. My grandfather used basically this dough, poked anchovies into the dough and finished it off with crushed tomatoes and Parm, no mozzarella, and he was straight from Italy....

Seems like a classic 50s-60s homemaker recipe for someone with good basic skills, and with dough fermenting in the fridge all the time, you could have dinner on the table with very little work and not much clean up. Elegant presentation. The ingredients and method are clear to a beginner, though this is more sophisticated than is evident. Very good vid.

Excellent pizza dough, the best I've ever made, AND the other day when I wanted garlic toast, I made a batch of this dough up and made it into various shapes, and it's SO GOOD! and thank you for putting grams, it took me too long to learn that if you want consistent results making yeast doughs, a scale is essential! I know this is an old video, but I want to thank you for the recipe. I have been making both Detroit pizza and grandma pies in Lloyd’s pans for a few years now and my family would choose them anytime over any thin crust pizza, homemade or delivery. I grew up in CT, and while New Haven pizza will always be my favorite, it isn’t achievable in a regular home kitchen. I don’t have a charcoal oven that’s perfectly seasoned or a fancy wood burning pizza oven, just a regular oven and some really good recipes and pans. But that’s the best part of grandma pies and Detroit style - it is possible to make really, really good pizza in a regular oven with just a good pan and good ingredients.
@margaretcopeland5029 Жыл бұрын
This was a success. I ordered two of the Lloyd's pans. Your recipe is really set up for one pan with the necessity of rotating the trays but for the first 18 minutes or less I was rotating the pans and revolving them every six minutes. I did the final parm/orgeno bake individually. I also didn't have enough cheese to cover each pizza but it still worked out. My pizzas weren't as crisp as yours because I did not have any cooling racks large enough so they sort of steamed on my cutting board. Next time because it is so much easier than thinly cutting up a block of mozzarella I will just buy the presliced cheese. Everyone liked it.

I love to make my pizzas in that kind of a pan, the crispyness is Awesome! Yea it's amazing how 1 minute can turn around the doneness of that dough! Been there done that. I like to pre cook my dough around 5 minutes at 475 degrees with a little sauce on top of the dough before I put the rest of the sauce and cheese on the dough, and then lower the temperature down to 425 for around 12 to 15 minutes. My oven gets very hot so if I'm not careful the cheese will burn. It's fun experimenting with all dough recipes, the possibilities are endless. Your videos are great! Thanks for sharing this. It's my favorite pizza. My late mother in law and my wife's cousin both made this amazing style pizza and I wish I had learned theirs but now we get your authentic recipe! Thank you!

Beautiful! I can't wait to try this out. It looks relatively simple to prepare the sauce and toppings as well

Thank you! You can add whatever you want to the sauce, but I really think this way along with the garlic oil has a ton of flavor. Enjoy!

Some good tips you gave with this demonstration, thanks. My only change is I can't handle those big chunks of tomato, lol, so I'll have to puree them for the sauce.

Did he just say “chunky sauce, like the grandma.” That is hysterical. I loved my chunky, soft granny, so I am definitely making this pizza. :)

What?! Sclafani isn't made in Italy?! I never knew. I grew up in Poughkeepsie and all of my family are in Westbury, Hicksville, Astoria, Brooklyn. Thanks for all of your wonderful recipes.

thanks ! now that i've retired, i have a lot more time to cook i never knew that there were so many types of pizza your videos have helped me so much !

Thanks! I'm glad you're enjoying the pizza videos. There are three main types of pizza served in most of the pizza shops in New York. Regular, NY Sicilian, and Grandma. There are of course some places that try to do Neapolitan, deep dish, and even Detroit style now, but those are the extreme minority and very niche. New Yorkers tend to gravitate to the three mentioned above with regular far outselling all of them.

Looks like the pizza my high school used to sell for lunch in the seventies.
