I have a similar recipe. An added trick I use is to add 1 teaspoon of baking powder in with the flour. I believe it helps the flakiness.

I brush milk first then sprinkle sugar, and instead of flour in the apples, I use tapioca starch. That’s just how I learned it from my mom!❤

Ive always brush it with egg wash on top then add granulated sugar. I love that she uses foil over the pie .

Can you rephrase what you said I think you're talking about the dough puffing up - people use beans to hold the filling down. I think I saw Martha Stewart do it and she reuses the beans.

You can use uncooked Rice instead of beans. I cook my pie crust at 350 degrees for 8-10 minutes let cool add filling and cook pie until it is done. This keeps the pie crust from having a raw bottom. It works every time for me. BTW I do prick the crust before browning the crust the 8-10 minutes.

Make sure you do not stretch the dough while you are rolling it out and forming the edges. The dough requires a lot of fork pricks to make sure it does not shrink. The puffing does allow the crust to be a little flakier.

I think that you made the prettiest pie that I have ever seen. I do think it would be nice if your face was showing while you’re making the pie instead of just your chin down. I also think that it would be a good idea if you would smile once in a while at least at the beginning and the end I think you did an amazing job. If you get a chance look up Brenda Gantt. I think she is an amazing cook but to tell you the truth her pie couldn’t touch yours but I love her. Have a nice day and thank you.

When you make a cream pie and are heating up the stuff on the stove, use a rubber ladle (not plastic) to constantly stir it - make sure the ladle can handle the heat. After you've heated up the cream pie filling transfer it to a clean pan the same as what you used to heat it up in so the filling doesn't scorch. And when it comes to banana cream pie mix your bananas in a tablespoon of lemon juice to keep them from turning brown. 🫓😁
