Can you tell me why you would use vinegar in the recipe? What does it do? Thanks!!

This recipe has been handed down over several generations. I am not sure why the vinegar is added. However, I can tell you the taste is amazing when you finish a batch of pear butter using all the ingredients in the recipe. Perhaps it helps the pear butter thicken better. Again, I am just not sure.

You can use Pear juice in the bottle

Yes if you want to make pear jelly. I would suggest if you are going to use pear juice that you follow the directions in the Sure-Jell package. I have made cinnamon pear jelly using the directions in the Sure-Jell package and simply added a teaspoon of cinnamon when I put the juice in the pot. Love cinnamon pear jelly!
