It helps the viewer to focus on the educational aspect of the video. Purposely avoiding entertainment (of colours) and increasing focus of the mind on learning. Also during video editing, its easier to manage black and white contrast as compared to colour video. This makes production easy and thereon makes the publication process quicker. - Zubin V.
