Better heat conductor, but not non-stick unless it's been treated or seasoned. That's why a lot of the "super copper-whatever" reviews are so bad: they don't read the instructions that say to season the pan with oil or grease (under heat, then wipe out with paper towel before use), and to be fair, the magicians in the informercials leave that bit out. They make it seem like it's just a non-stick miracle when in reality you have to season the pan. If you care for them properly they actually ARE amazing. Cook evenly, minimal energy savings, non-stick, very easy to clean. So it's a mix of deception and lack of self education (due to the "magic of television"). Seriously though, copper are some of the best, affordable pans available. Just read the enclosed packet or Google proper prep and care. They are great!
