The story behind it is that the garbage plate was originally what they fed to homeless people which was made out of food that was either going bad, or they had too much of. Turns out it's really delicious when done properly so they started selling it

I would've liked to know more about the story of his dad feeding the people who didn't have money. Like, did he feed them for free or did he mean for cheap? Gonna do a rough estimate here. Hamburger patty is around 200 to 250 calories a pop, kraft singles are 50 a piece, generic store bought macaroni salad depending on brand can be between 350 and 500 calories per cup, about 250 cal in a cup of home fries, 100 calories per slice of that thick white bread, a cup of baked beans is 392 so just round up to 400 for the sake of portioning. another 200 calories for the ground meat and au jus ontop (estimate based wholly on meat and nothing else), im not gonna stress the onion because a whole one breaks hardly 20. One garbage plate can run about 2000ish calories if you have: 1 cup baked beans, 1 cup macaroni salad, 1 cup home fries, two cheeseburger patties, a mound of chopped onion, two slices thick white bread, 1 cup ground beef with au jus, and sauce. Grand total figure around 2500 on the high end
