Brush a bit of oil on both sides of the pita then lightly pan toast. Wrap in a towel to help them stay pliable.

Are you on drugs or something? When you put oil on them, you are making them WET, so they are more flimsy. You make them wet, toast them and then wrap them in paper towel??? Mmmm ok, please do not follow this persons advice.

@@user-rh3fn9vz2j .... The technique works perfectly fine ... because every Greek place serving pita has done it, going back to 1975 when I first ate a gyros sandwich. The guy above is an idiot... Oil is not water. Oiling does add a bit of moisture but it mainly helps to color the flatbread.... some additional cooking makes it more digestible too. Briefly encasing in a paper towel prevents the bread from stiffening as it cools, then cracking later. Don't let them sit around though--- sogginess will develop from the steam generated during heating (NOT from the oil.) I'm sorry to go on so long but an explanation to counter the above guy's reply seemed necessary.
