As a greek person..if you want to take tzatziki to a next level, salt the grated cucumber which draws water out of it and squeeze in tea towel..then use thick pot set greek yogurt and squeeze any excess liquid using cheese cloth..then add tablespoon of white wine vinegar together with crush garlic salt white pepper and chopped dill..it will really lift flavour .

@donaunsworth5620 you will be blown away when you see how many varieties of Greek yogurt exist in greece..you must use thick pot set greek yogurt..all the other stuff called greek style yoghurt is too watery. Tzatziki should coat your spoon and stay there for really good Tzatziki texture.

One tip I got from Americas Test Kitchen. Make some extra marinade (that doesn't touch raw chicken). Then toss the chicken in it AFTER you grill it. The post-cook marinade actually penetrates the meat much more than pre-cook. It really amps up the flavor.

My wife (who is Greek) gets a bowl and puts in lemon juice, olive oil and some oregano. After grilling, remove the meat from the sticks and toss the meat in it. Really amps up the flavour.

I do the same thing, it is known as a hot marinade in our kitchen. nothing better than chicken wings cooked to half way on the gas grill then tossed in a bowl hot with Franks and butter, then back onto the grill to "set" the sauce.

Just want to say this has become one of my family's go-tos for big meals. I've made this about 4 or 5 times now and its incredible every time, even if the ratio of ingredients isn't exactly 1-to-1 or you wind up forgetting something by accident like oregano its still a banger every single time without exception. We don't even bother making the extra bits, we wind up getting some store bought Naan bread and Tzatziki Sauce and/or hummus and we're good to go, we'll fry up some onions and bell peppers if we're feeling fancy but other than that this is honestly one of the easiest and most delicious things you can cook in my opinion. Fantastic as always.

Protip if you place your yogurt over a small colander with a coffee filter and leave it a for a few hours you get a really creamy yogurt thats not watery. Try making tzatziki with it (and using EVOO instead of mayo), it's great.

Trader Joe's Middle Eastern flatbreads and TJ's tzaziki, though I also make homemade hummus (1 can garbanzo beans, half drained; 3 cloves of garlic; 2 big tablespoons of tahini (also TJ's); zest and juice of a lemon; S and P; olive oil in food processor to preferred texture, as well as maybe cilantro, or parsley, or whatever flavor agent like sun dried tomaotoes, to die for).

2 tips for the sauce, get rid of all the seeds before you grade the cucumber, then strain all the water and swap the mayo for sour cream, Greeks never add mayo to the sauce :)

I'm swedish but ive been to greece, like 30 years ago. Back then we didnt have greek youghurt in sweden so we used plain youghurt and put it in a coffefilter to drain moisture out of it. These days greek and turkish youghurt are everywhere so no need for that anymore, its thick and luscious already. I like to cut my cucumber. I deseed it and then cut it i to little triangles. I then put salt on it and leave it in a collander to let some of the water drain. Lots of garlic, black pepper and som nice evoo and bobs your uncle.

Greek here with a couple of tips to really level it up: - Tzatziki: Before grating the cucumber cut it lengthwise and scoop the middle leaving only the crunchy part. Hit it with a pinch of salt and a splash of red wine vinegar. After 10 minutes firmly squeeze out the juices. Less effort and better, less watery result. The small addition of mayo, a sacrilege for the purists, is essential to elevate the creaminess and fattiness of the sauce. If you have access though to the real deal (real Greek yogurts in Greece or exported to EU have 10% of fat) you don't really need the mayo. Unless you want a rounder, less harsh sauce. - Pita: Follow the proofing of your other killer recipe of the 1-hour pizza -a Friday staple here at home- and after rolling them pitas take a long wooden spoon and press lightly the dough with the stem forming a plaid pattern. Spray with water and hit the grill. This will guarantee a much better cooking of the pita and make it to fold better.

I’ve been making the sauce many times already minus the lemon juice and it is only now that I’ve come to know that it is called the Tzatziki Sauce. 😊 The pita bread is very classic. I love it. In a bout of desperation for a better pizza dough, I ended up adding around 1/2Tbsp of white miso paste (in a 3.5cup batch of dough) to the dough mixture to try and get some fermenty flavors going (I was out of neutral beer, I also avoided adding salt because miso is pretty salty). Surprisingly works, might be worth experimenting with if you have it around.

I get the addition of mayo to the tzatziki in your case, just noting that here in Greece you can get very low moisture yogurt that I think isn't as widely available elsewhere. That's what most people use and the result seriously thick, no mayo needed. For fattines, high fat yogurt + olive oil do the trick.

Simplest tzatziki is yoghurt, cucumbers, and garlic. A lot of people add dill which I like and one of my aunts put fresh mint which was okay but dill is better. But tzatziki is one of those things in Greece that every household is gonna do a little different

Nice work on the pitas. For the tzatziki - I like to slice my cucumbers lengthwise and salt them to extract a lot of the water beforehand and then do them as a fine mince (not a big fan of big cucumber chunks). Mayo in tzatziki is akin to blasphemy lol - try olive oil in place of that. Good marinate for the chicken - I've never tried dijon before, I may try that. I do like using a bit of greek yogurt to marinate chicken - it helps tenderize it in the same way that buttermilk does and it sticks to the chicken pretty well and helps additional spices and herbs to adhere - I'd have probably added oregano to the marinate, but still - solid.

I found that using “flour sack” cloth as a means to wring out wet ingredients (like the cucumbers here) works exceptionally well. The cloths I use come from Walmart and are so cheap they almost classify as disposable.

I got a nice tip from another channel a while back: cook it and then blow torch it if you don't have a grill to get it some nice color and flavor after cooking. Smaller pieces like in this recipe can also be placed directly under the broiler and once there is some color on one side, flip the pieces and do the same on the other side. I would use the torch outside if you do that method, or open a window/run the vent if you're doing the broiler method. No one wants their house to smell like that for days after all xD (The Al Pastor video on here does an excellent job of demonstrating how to get color with a broiler while also cooking the chicken!)

Only things I would critique is you should mix the chicken marinade up before you add it to the chicken, like you did with all the other sauces. When zesting, the tool is designed to be used turned over from what you have it and you zest with the lemon under the tool. You zest it like you're playing a violin. That's why the underside is curved inward so it can catch all the zest in the tool. Obviously if you're just zesting for a little bit of a cover over something you use it the way you did there but if you're zesting to add it to something like a marinade or sauce you use it like a violin. Also 4 the tzatziki sauce .. I no add mayo , just full fat yogurt, and some ouzo drink. A tiny splash of ouzo , makes this sauce like tasting the sea
