Delicious! I looked for a Greek quinoa recipe after ordering it from the deli several times! This taste almost exactly to the one I’ve been buying pre-made. I’ve made this 4 times now! The last three times I’ve doubled the dressing and find I like it better but that’s just a preference! Thank-you for a superb recipe!

Amazing recipe! Superfood meal full in nutrients and vitamins! As a Greek ( we love herbs) I add some parsley or mint which skyrockets it. Chef, you are real and authentic, something we need so much in todays perfect yet fake world. Hi Justin I'm going grocery shopping later today. Buying all I need to make Greek Quinoa salad Vegetarian stuffed bell pepper Mushroom rice with veggie broth Vegetarian enchiladas Cauliflower tacos and your avocado dressing. That way I have food for a couple of days. He's so excited. Plus you know I'm cooking food for my husband my 2 daughters and son in law. I'll be cooking a lot. But my sons the only Vegetarian. I'll text you after I have cooked all.

You can use rice vinegar, balsamic vinegar or apple cider vinegar. By the way, when they make red wine vinegar, the alcohol is converted into acetic acid which gives it its acidic taste, so you don't have to worry about it being alcoholic if that is your concern.

Following your cucumber seed theory to its logical conclusion: God put the seeds (pits) in olives because he wanted them there. He knew that whatever makes up olive seeds are things our bodies need. Unfortunately, he forgot to give us titanium teeth with which to chew up the olive seeds, so it appears that the god you are relying on to force everyone to eat cucumber seeds (even if they give them indigestion) is not infallible and therefore not really God. Alternative belief: God put seeds in cucumbers ( and olives and avocados and even people) as a means for them to reproduce themselves. Taking out those cucumber seeds was cucumber abortion. Other than that ungodly act ( for which Coit will end up in hell), this looks like a very tasty recipe.

@@dianaf2077 Come on now. Cucumber seeds are delicate enough to eat without a problem. He wanted them for our bodies. And actually, watermelon seeds are loaded with nutrition. Noone may want to eat them because they have other things they can eat. But think about long ago, when food was hard for people to come by. Those seeds would have been a nutritional resource for our bodies that we as starving cave people or just earlier people would have been grateful to have. And if some kind of catastrophe happened, we would be grateful for them again. Seeds of all kinds are loaded with nutrition.

If you leave the cuke innards your salad dressing might taste a bit watery. Eating them after removal will ensure no waste and you still get to consume them. Your salad will still be nutritious.
