About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the KZbin channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via KZbin videos, her cookbook, and cooking classes. Hi Pailin Recently found your site, tried the green curry without the meat very tasty. I am on a temporary no meat or fish diet although I am not a vegetarian or vegan. Do you any none meat recipes that I could try. Kind Regards

I made this tonight. I put my twist on it! It was easy. I used lobster and eggs, as I don't eat chicken or red meat. I also used frozen mixed veggies. I scramble a couple of eggs with some sauteed garlic and onions. I took that out the wok and the cooked the green curry fried rice as you did in the video. It was delicious or as you say, "Good News on good news!!!!" Thank you for posting your videos Keep them coming!

I need to make this! My fiancé loves his green curry fried rice and always eats this whenever we’re in Bangkok at “be my guest”, right between iCon Siam and Millennium Hilton hotel. Finally I’m able to recreate it whenever we’re not in Bangkok. Thank you Pailin!

What a great recipe. I bought green curry paste for the first time and wanted to mix it with rice and your video is fantastic. I'm going to try this recipe. You also give great inside tips that are very helpful. I"m also making cod with black bean garlic sauce.. Should be a great combo! Keep up the great work!

I love to eat street food and wishing that I can bring all of thai food back to US. Phailin, Did you buy the burner, so you can cook in front of the camera to illustrate your cooking method? Or did you buy it because of the high BTUs? BTW, this looks really good. I am also going to make it with fish balls, cause I have some in the freezer. This is a good excuse to use it. Thanks for the inspiration as always.

Not sure you can call this 'fried' rice (more like a thick green curry mixed with rice), but it definitely looks delicious.

I tried to make this tonight but it just didn't turn out the way I was thinking it would in my mind. I am very new to Thai cuisine, both eating it and cooking. Could some one, anyone recommend a good green curry paste? (I'm not ready to try and make my own) Thank you!

Pailin, I'm at my local asian supermarket in NYC and they don't have kaffir lime leaves!!! Do you have an alternative so it's ok to omit it? Btw, your coconut custard steamed pumpkin recipe made me look good at parties..hehehe thanks! It's hard to screw up that recipe

I don't have Kaffir lime leaves and is not available here so can I use grated lime zest for this recipe? ????plz help me out

Rohit Pillai Just skip it, do not use lime zest, that too different and may change the way it taste. By the way, store brough green curry paste usually have kaffir lime in it, the recipe just add it for extra. 😊

+Julia Lupercio depends on the size, but for small shrimp, if they're pink and curled up, they're done.

Kaffir Lime is illegal here in the US :( Asian stores in my neighborhood offer Lime leaves and Citrus Fruit Leaves instead. Is it okay to substitute them for the Kaffir Lime Leaves?

Thats what Ive been doing. Im South Asian, so its really a bummer because Kaffir Lime is also a very important ingredient to us. We can only get it dried at the markets. But a lot of times, its smuggled in to the US through Canada because we live 5 minutes away from the border. Lol!

You can do soy sauce or just salt. It's just another salty component.

i would fry e rice n e chic with garlic 1st 2gv it e charred wok taste n move e rice 2 e side n fry e paste till fragrant add e coconut milk then stir in e rice 4 a couple of seconds... this method is makes e rice crispy n moist at e same tine as e coconut milk will b evaporated in 2 e rice...

Roh G I know it's too weird with the smell, but when you put it in food you won't smell it and it makes every dish to another level of goodness. You don't know what you miss out.

By ethic she is Thai. More specific Chinese-Thai. Born and spent her childhood till teenage in Thailand. By citizenship she is Canadian. Watch her video. One or two of them describe who she is and there are even a reunion party with her frineds in TH. I know one of her cousin who live in the States for 20 years He is the one who introduce me to her channel. If you ask me, her English is good long before she went to Canada because 1. she graduated from a well known school in TH 2. her gifted.
