Looks so awesome! When I was in the Air Force, many of our older squadron mates had been stationed in Thailand during the Vietnam conflict and consequently had Thai wives. We would regularly enlist these ladies to cook their traditional Thai food for party's we often had. Their green curry, and Pad Thai and especially their Thai beef salad were some of the best food of my life! Love to Thailand, their wonderful people and their most amazing food!

I know this is an older video, but Thai Green Curry is my absolute favorite!!!! I've had it at restaurants and have tried to make it at home... It's SO hard to find the ingredients where I live now... but I do the best I can when a craving comes. Plus, I feel like I make it better than any places that serves it by me. Lol

I had a go at making this, substituted the Gallangal with Ginger. I fried the paste in a little coconut oil before adding water and added a splash of fish sauce instead of salt. The aroma from the paste was out of this world! I will definitely be making this recipe again and again and again! Thanks Mark, Ying and gorgeous Micah. :)

Just made the recipe. I added double the cumin seed and coriander seed from the written recipe to match the amount seen in the video. Also, I looked everywhere for the kafir lime and couldn't find one so I used the zest from 2 limes instead. Couldn't find the cilantro root anywhere as well so I chopped up a handful of cilantro and hoped for the best. This recipe was fantastic, we are weak when it comes to the spice so I added more of the coconut cream to help make it less spicy (I added 20 of the green chilis based on what I saw in the video). Thanks again for taking the time to go step by step so I could follow along.

This would be much better if you fried the paste with the coconut milk until you see the oil. Then threw chicken and eggplants in and fried until they cooked; then water and salt. It gives super strong fragrance :)

This is one of my favorite youtube recipe of all time! I made it 3 times now (with all made green curry paste) and it is by far the best green curry I've eaten ever! This is the only recipe where I see to boil the green curry paste and the chicken in water without any coconut cream and it makes all the difference ! Thanks a lot to you and you mother in law !

10 years ago when I was living in LA I used to go to a place in Thai Town called Surmitt Thai (I believe I spelled that right). They had authentic red and green curries that tasted like nothing I've ever had before. Super spicy, chunks of coriander root in the green curry, Thai eggplant, lime leaves, etc. They had fish ball green curry as well as a super hot catfish curry of some kind that I loved to eat but would wreck my stomach. Thanks for the great show of my favorite food!

I can't get most of the ingredients here in western Tennessee so I buy pre packaged green curry paste. Had to order kaffir lime leaves and red Thai chili peppers online from Amazon. No Thai eggplant so I'll substitute bamboo shoots. Nearest Asian food market is Nashville 2.5 hours away. Looking forward to an exotic meal for our church Christmas party next Sunday. You have a beautiful wife and child. Your mother-in-law reminds me of my mother-in-law who passed in 2017. My Filipino wife and I have been married 31 years. We've been to Bangkok back in 2001. I prefer Thai food to Filipino food which I find somewhat bland. I love Thai, Chinese and Indian cuisines for their spicy and fragrant dishes. Enjoy Thailand my friend, you are a lucky man!
