Here's a cooking hack for chopping greens. Place your greens with a lot of water in your Vitamix ...use the pulse option and pulse until the greens are chopped how you prefer . Strain water out. You have both washed your greens and chopped them. I have never gone back to traditional knife chopping off my greens ... I eat more greens now !

I was a little scared to try this dish as I’m not the biggest kale fan. So, i chopped the kale super fine and I also crumbled and marinated the tofu. I cooked the tofu for a long time, which made it nice and crunchy. This is honestly one of the best salads I have ever had. I would have eaten the whole bowl if my stomach would have let me!

I just made this dressing sans garlic and jalapeño. It tasted like a Japanese dressing at a Japanese restaurant. . It was sooooo wonderful. I did not measure the ingredients . I just combined them. I used iceberg lettuce and I must confess I used grilled chicken breast - I am trying to transition slowly to wfpb. No more oily dressings for me!

Tip: if you don't have a lemon or line juicer, you can always use a fork. You just put the fork in the half cut lemon or lime and twist and squeeze. Works great. You just need a little elbow grease for it to work.

Even though I swore I would not buy another cookbook, it looked so good I immediately downloaded the kindle Engine 2 Cookbook so that I could make it. My husband and I absolutely loved it and ate the leftovers for a snack this morning. The dressing is just delicious. Since I like to mark up cookbooks, I ordered the hard back copy of this same cookbook and will use the kindle version when we are on vacation. Although not having heart disease, The Prevent and Reverse Heart Disease is my go-to cookbook and love every recipe I have made. You really can't go wrong with recipes from the Esselstyn family.
