Thanks for the video, Rick! Can you do the viewers a tiny little favor? Can you boost your microphone levels a bit - or normalize that with the music you add? Your voice is pretty low so I turn up the volume - then I get hit loudly with the additional music. ¡Gracias!

I grow amaranth and thank you for an authentic Mexican way to cook them. I've not seen this recipe on other Mexican ladies channels because most are rather colonized and use all kinds of products rather than indigenous foods. Yay Rick.

Chef, you've inspired me go into a deep dive on authentic Mexican cooking. I even ordered a high power blender so I can make sauces from fresh, dried chiles.

Hey Rick, huge fan here, thanks for another great recipe! I realize you were probably using canned beans for ease and accessibility, and I use them all the time too of course, but you should try out Rancho Gordo beans if you haven't already. I am amazed at how rich and flavorful their beans are and they really set off the dish, especially when they are a main focal point like they are in this recipe. I'd love to see some more bean recipes!

Seriously. Come on folks, you can use another sweetener if you want. For those who are so opposed to sugar, myself included, you should _already know_ what to do here. Do what you do with every other recipe you have to adapt to meet your dietary needs and make the appropriate substitutions. In this case, I'll use some stevia to taste to achieve the right balance.

This has become a staple in my diet. I like to use it with frozen kale or chard from the garden.

I just made this and loved it! Added one hotter NM red chile to the anchos, as I always do. Rick's recipes are easy to adjust for spicier tastes like mine. I probably could have added three of them and still loved it. Best not to overdo when not sure.

Oh my goodness your videos have been like university for me as I wander the streets of PV and surrounding neighborhoods. Foods I have noticed and even eaten (!) but not sure what they were have been de-mystified for me in your videos (machaca) and I cannot even begin to tell you how it is changing my experience. I have gone to local fruterias searching for banana leaves and avocado leaves without success but i have found mex oregano and chiles (pasillo and ancho so far) that I will purchase closer to my departure date and plan to freeze once i am home (yes or no?). Having fun now buying stuff i have learned about in your videos! And wandering the streets in my little mexican neighborhoods is a lot less daunting than it was a week ago. There’s soooo much deliciousness here.

I have been to numerous grocery stores in the north east and I can never find Mexican oregano. I hope one day I will be able to taste it! What's it like?

I bought soupeduprecipes wok and it came with a nice wooden lid that also fits nicely over our frying pan.

Made this, the only thing I would do differently was I didn't cut the kale small enough so when I took a bite the kale dragged my filling out with it. Lol but delicious none the less.

Off topic: Would you do a video on various Mexican cheeses? I've tried a few and find them mostly tasteless. Well, some are more salty than others. I know they have different textures and cooking characteristics. Would love to know more about them. Thanks.

TIP: Hot tap water is generally not fit for consumption due to heavy metals that leach from the heater into the water

assume it's a time-saving shortcut to make it more "gringo" friendly. Folks prolly dun have time to soak and cook dried beans. Or have the foresight to have them in the freezer.

Canned beans are one of the best things to have in your pantry. I have and use dry beans, but there are times I want to make chili or refried beans right away, and they're very handy for those times. Plus, they're not gross, like canned spinach, carrots, etc.

He offers many recipes for cooking beans from scratch .... and as a former chef myself, I can tell you that most times when cooking at home, for many restaurant workers, the easier the better.

@@croaker6099 That used to drive my grandmother nuts on any cooking show…..never getting literally everything out of a mixing bowl or blender. She was of that generation that would call it waste. But the limited screen time for a show was not worth wasting on scraping out a bowl
