Agree on the timing for best taste. Here a nugget for u. If u were to be there before 9am, they have Fried Bee Hoon (Rice vermicelli) as alternate option. Try it, u will be amazed. Best timing for this with regards to consistency is before 11am. Another nugget for u. The best and most consistent CHAR KWAY TEOW for me is Hai Kee. Have u tried it?

The first time we had this was at the food court in the old Malaysian budget airport. Hubby ordered it and it took so long to cook we didn't know what was going on. I shared my meal whilst he was waiting. When he finally got his meal he tasted it and said it was incredible with a charred flavour that was so delicious. He let me try a mouthful and it was so different to anything I had tasted but he wouldn't share anymore. We didn't have time to order another plate. One of the most memorable dishes we have had.

I only discovered Char Kway Teow back in 2016, during my 1st trip to Singapore, but it has stuck with me and I have been craving for it for years, but I haven't had the chance to go back. We have places that offer Char Kway Teow here in Manila but it lacks the oomph. I'm still in search for the one that can have the closest taste here to the one I had in Singapore years ago.

I am fortunate to try his father CKT when he operate at the coffee shop at Outram park many times. Fry one plate at a time, cannot be rushed. That is heavenly CKT IMHO. When move to current location, the standard really drops a lot. Maybe because I will eat at the peak period. Remember at one stage (maybe a one off incident?), they use the thin ipoh hor fun type of kway tiow to fry. That is terrible. Now I have totally give up eating at this stall, long wait and not tasty. To have my CKT fix, I will be eating Meng Kee at Havelock Road. 2nd Generation helming the wok now. Consistent taste always, of course the 1st gen uncle does it better, but he no longer fry CKT. He do early morning fried carrot cake, which is another damn good dish he does.

Earliest dated back his father operated this stall from a Tanjong Pagar old coffee shop after that shifted to Outram Park HDB coffee shop, at last to Hong Lim food centre which currently run by his son, the standard drop these days while this 2nd; generation took over.

Where is Hai Kee char kway teow? I like the CKT at this Bukit Merah View hawker centre - the one without any signboard but he got newspaper articles written abt his CKY pasted at the glass. $3 & $4 plate. $4 got prawns. But cockles just a few and so tiny leh. Another 2 stalls away is also another CKT stall with signboard but i prefer the one without which is at a corner. Never thought much of this stall... I tried it once.. Long time ago... Will go back and try again.... Maybe the timing... Very unlikely I went in the morning. But the cockles look awesome. So many places with crap cockles smaller than your last fingernail... The biggest cop-out is lao fu zi at old airport Rd... I tried it at least 10 occasions.... Just wet, slimy, and no char whatsoever. I wonder why there is still a queue... I always ask my table of people what they think, nobody ever says it's good. Just passable.

It's flock mentality lah. See queue, must be good till you actually try it.

Is amazing how times has changed. Hum need to pay now while in the past some don’t want it. Perth sucks for CKT, you will not get a Singapore CKT version and because majority is Penang influenced. People here got so caught up in the taste here they forgot how the real deal is.

I used to work in the vicinity. I disagree with your caveat totally. I eat at this stall very frequently. There was once when I was there very early and no one was in sight. I thought, no queue and he can cook the best CKT for me. On the contrary, it was the worst plate of CKT ever. My guess is, he has already perfected the skill for mass cooking. Every ingredient or sauce that he puts into the pile of kway teow and yellow noodle while frying is according to time tested and tried recipe over the years. Even an additional squirt of dark sauce or two, will not affect the final CKT in such a big wok. Cooking individually is a different story. Any mistake could result in the dish being of a lower standard. Two best CKT in Spore is Outram and Hai Kee. I have tried the rest of the so called best CKT and they can't compare with these two. Wonder if Hai Kee is still around.
@GregoryLeow5 жыл бұрын
Haha, maybe not individual orders but his batches in the morning seem better to me. Have you tried his ckt in the afternoons? Eeks, not for me!

@@GregoryLeow I rated Outram as #1 since mid 1970s until 2000s when I go CKT hunting based on KZbin recommendations. Most were just meh except Hai Kee. I fancy Hai Kee could be better than Outram.
