What's G.Rich? Meal looks good. Notice your cutting board was moving when you was cutting on it. Take a damp dish cloth and put up under it and that will keep your cutting board from moving.

The seasoning stuck in the bottom of the pan is called fond. Deglaze your pan with a lil red wine and voila! Good eats G Rich.

I am from New Zealand, and a lot of your food is what I grew up with, which is inherited from my mother from her childhood from the 30's. Neck chops, ox tails. Its ironic, that here at least, Ox tails are no about $15/lb. Back in the day they were cheap.
