try letting the cheese melt on the tortilla, then flipping everything on the grill. That’s the “real” way of doing it, it’s gonna be a very juicy tortilla though 😹

Hi debra, sorry for your time wasted. It was just a short. We are cooks and sometimes I just take out my phone and film spontaneously. Some people watch our videos just for the sound. But here are the instructions. We also just made this last minute as a staff meal so it’s not an authentic quesadilla recipe. You can sub steak for chicken or mush up the beans if you want a vegetarian version In a pan sauté off some beef strips (we used New York strip) cook for 5/8 min Add onions, garlic, chili powder, cumin, oregano salt and pepper. Then add some black beans (optional) or red peppers and cook for another 2-3 min Remove from pan and cool (can be made a day in advance) Heat another pan (med high) and add a touch of oil. Place tortilla in pan and add cheese and filling (like in the video) Cook for 5 on each side or until filling is warm and outside is a nice brown. Adjust heat if it looks like it’s getting too hot,

We do this this called “wash hands”. Also, meat was wet, cheese was dry. And…the tortillas are heated to a minimum temperature of 165 F, where all bacteria are killed. Thanks for watching and commenting 😘
