When I say that I bought a brisket, I often hear "what's that?" Many skip this meat on store shelves, unless they want to add it to some soup or broth, and it is an excellent meat for baking. Especially long baking. Then it becomes one of the greatest delicacies. Crispy and at the same time so soft that it easily breaks down into separate muscle fibers.
This time I made it on the grill - because it's grill season, but you can also in the oven. The brisket looks nice, but requires proper processing so that the meat easily comes off the bone. It should also retain some moisture inside. Then it's a perfect combination of structure and taste.
