Summer is finally here! We are gilling up a delicious side dish for you today! This is a versatile vegetable salad where you can swap ingredients to create new flavors! I hope you enjoy!
Ingredients:
2 Yellow squash
2 Zucchini
2 Bell peppers
1 Onion
Olive Oil, about 1-2 teaspoons or as needed to coat your vegies
Balsamic Vinegar 1-2 teaspoons
Salt
Pepper
Onion powder
Garlic powder
(Seasonings to Taste!)
8 oz Feta Cheese
Directions:
Cut up vegetables and coat with olive oil, salt and pepper. Grill at medium heat for about 5-6 minutes or to your liking.
Toss cooked vegetables with seasonings, balsamic and feta.
Serve immediately or store in the fridge until ready to eat. I like to take it out a half hour before dinner just to get the chill off.
