Hi friends! I've been out of touch for a while due to many things, the latest of which is a broken ankle! This video was made a few months ago and some of you may not want to turn the oven on during the summer. No problem! You can either put these in a toaster oven or even bake them on the grill! I promise to have a fabulous summer side to go with this in my next video! Meanwhile, let me know what you think and please send good vibes!

3 Bell peppers, halved and seeded
1/2 C chopped onion
3 chopped garlic cloves
1 bag frozen riced cauliflower
1 lb ground beef, 1/2 lb ground pork (or whatever you have on hand)
Salt, pepper and other seasonings to taste!
Add 1 teaspoon of fat to saucepan and put on medium-low heat. Add onions and sauté for a few minutes then add meat. I like to add 1 teaspoon of salt to 1 lb of meat, so I put in 1 1/2 teaspoons at this point with some pepper. At about 3/4 of the way cooked go ahead and add your chopped garlic. Drain meat mixture, then add cauli rice and break up.
In the meantime, slice peppers in half and deseed them. Lay them in a greased baking pan until ready to fill. Taste your filling! Adjust as necessary then scoop filling into peppers, freezing any leftovers.
The sauce:
Some leftover beef fat to the same saucepan with about 1/4 cup chopped scallion or onion. Sauté for a minute or so before adding 1 can of tomato sauce. Simmer for a few more minutes before adding seasoning. I used fresh but you can used dried for sure!
1/2 teaspoon of each dried or 1 teaspoon fresh, parsley, thyme and basil.
Simmer for about 5 minutes, taste and season as needed
Spoon on top of peppers, bake at 350 for about 30-45 minutes depending on pepper crunchiness! Enjoy!
