Steps to make you into a better cook. 1. Prepare your meal. 2. Start to eat your meal. 3. Look at Chef John's Videos during your meal. 4. Feel like your meal isnt up to par. 5. Wait a day, prepare a BETTER meal. 6. Rinse and Repeat! :D

I'm eating this right NOW om nom. 1) I could have used more cayenne, not that I was stingy with it 2) I used key lime juice instead of rice vinegar and it was AH. MAY. ZING. next time might splash a bit of cocoanut milk in it, maybe some thai red curry. REALLY REALLY good. Cilantro tomatoes on the side, which I normally love was not a good flavour match.

this is really surprisingly coincident. I just read a recipe from a cook book my sister gave me and I tried out the salmon chowder with corn. and the way its prepared were very much like the way you did

I think that relish would be good on ANYTHING. Grilled chicken comes to mind. I too prefer white corn (particularly Silver Queen), but I think yellow works better for roasting or pan frying. I like it lightly browned and it really brings out the sugars.

I've been doing this for years after seeing this video, but have a sweet potato mash involved also. I was surprised to see that this video does not have the sweet potato. I thought it did but that must just have been my addition and over time I thought it was part of chef johns recipe.

If you like white and yellow corn together from one ear look for bread-and-butter corn. white (the bread) and yellow (the butter) on the same ear.
