I am with you on the cottage cheese in lasagna!!! It is SO good, makes it so cheesy and you can't tell it's cottage cheese after it's cooked. It's a form of cheese- whose gonna complain:) And I am in VA and we do tater tot casserole all that time- I do a Mexican one that my family loves. Love the recipes!

I grew up in Michigan and had lasagna made with cottage cheese all the time. I never tried ricotta until I was married. I love both. I also make a mean tater tot casserole!!

My mom ALWAYS used cottage cheese for lasagna! Once I started cooking I used ricotta, but I think I am going to go back to the cottage cheese. I miss it!

Jen, I worked in restaurants for my whole career. One served mashed potatoes. We would peel and dice and put in a container (make sure water COVERS ALL) with water and they keep for 2 days like that. Wouldn’t recommend for roasting, since moisture would inhibit browning, but for mashed it is a game changer! Just rinse and cook in fresh water. Awesome timesaver always but especially for holidays when you’re making a large quantity and trying to get as much done ahead as possible.

I have a kid that doesn't like mashed potatoes too! So strange to me bc they are my favorite food! I remember shake n bake potatoes. I think one of the types was ranch flavored. My family marinates zucchini planks in italian dressing and grills them. So good!

I always used cottage cheese in my lasagna. First recipe I used 50 yrs ago said ricotta or cottage cheese. I my small southern Illinois town did not have ricotta cheese. Love your videos.

My mom’s recipe for lasagna uses only cottage cheese but drained, so it’s just the curd. It’s one of my favorite mom dishes 😁❤️ maybe it’s an Iowa thing.

I really love those disposable pans. I use them for casseroles instead of a 9x13 pan. That way I put one in the freezer and have the dinner, it’s a great way to do it when it’s just one or two people. My tradition on Christmas Eve is to make homemade Lasagna. I will be doing it the same way. This method is really good to stretch you food budget.

Ditto from next door in Nebraska. My family always had cottage cheese in the fridge and that is what mom used in her lasagna. I am not a fan of cottage cheese and the only way I will eat it is if it is in a lasagna. I think it could be put it in a food processor or mixer for a couple minutes and I think it would make it a creamier consistency if someone was really wanting more of a ricotta texture but definitely not necessary. The thing with cooking in my opinion is there is no one right way to do a lot of things. Part of cooking is the art of it and taking a recipe and using it as a jumping off point to create your own spin on it and make a dish that your family likes and will eat. There is no point in following a recipe to the letter if your family won't eat it prepared that way. Food is way too expensive to waste anything these days and to criticize what someone else makes a meal is just mean. If you don't like the way someone makes a dish, change it to the way you like it. Obviously baking is a bit different situation because there is more chemistry involved with leavening agents and so on, so you have to be a bit more careful with taking too many liberties with a recipe but not everyone has the time to shop multiple stores or access to certain ingredients as you mentioned. They may be unavailable in their area or they may be out of your budget,bso you have to work with what you have but that does not mean you still can't make a delicious meal that your family or someone else can enjoy. I'm sure your grandparents were so appreciative to receive the meal that you brought them, Jen. I'm sure that lasagna fed them at least three or four meals and was just plain comfort food to them while they were feeling ill. I hope they are both well again and I know how much your Lasagna Love families appreciate all of your efforts. I would be quite happy to receive a lasagna from you made with cottage cheese or whatever you chose to put in it on my porch! You are a fabulous home cook and have a lot of different recipes to offer and if it's not something someone wants to make, then just move on. There are things that you've made on your channel that had a flavor profile that I don't prefer, so it's just not something I make. For example, I'm probably the only person on the planet who does not like chili, which is odd because I really like Mexican food but anyway, sending you hugs and cheering you on n from next door in Nebraska!

Oooo dang, that Caprese Pasta Salad looks next level with the orecchiette, YUM! Fun fact, Sam's Club has that same brand of fresh sliced mozz 2/$8 whereas Walmart is nearly the same price for a single pound. Along with chocolate chips and real bacon bits that was one of the items that truly convinced me to get a Sam's membership this year as prices have near doubled per ounce, LOVE me some fresh mozz and I'm not ready to give it up for frugality yet 😆

I have a technical question. My stand mixer (not a kitchenaid) didn't come with a paddle, nor is one available for it. Would you just use the regular beaters? The paddle seems so much better but not an option. TIA. Great video, Jen!

I would use the regular beaters for the blueberry bread, if you triple or quadruple the recipe it might be to much for the beaters to handle but you could do it two separate times/bowls

Only way I make my lasagna.. Cottage cheese, parsley, pepper a little salt and parm cheese all mixed together soo good.. I wonder if it’s because back in the day ricotta cheese wasn’t as available so they substituted the cottage cheese?? 🤔 PS.. I have never liked mashed potatoes.. it’s a texture thing lolol heard all the time growing up “how do you not like mashed potatoes “ 😂

I know its more work, but you could thaw them in a strainer so any excess moisture would drain. Just an idea.

I always use cottage cheese for lasagna. I use fat-free bc it lowers the calories. And I don't even taste the difference.

My ex-husband wouldn’t eat lasagna if I used ricotta, he said it was gritty. So I would put cottage cheese in the food processor and he would eat it just fine. I’ll eat it either way. Everyone is so judgmental 🙄 I get lots of great ideas from you! Thanks for all you do!!
