Eyyy, here's some things I found from my own experiments making rock candy. This might help the crystals to form more. One thing I noticed was you didn't have enough seed sugar, coating the chocolate completely so there's sugar almost everywhere will give you the best results when forming the candy. It makes it more likely to stick and want to deposit the sugar there. Your sugar also wasn't all dissolved. It looked like you still had flecks of sugar in your sugar which won't let the solution deposit the sugar on the walls of your geode. You have to make sure ALL of your sugar is dissolved or you will end up with the slush you got the first few times. You also didn't have ENOUGH sugar! When you heat the sugar it should be able to dissolve 3 cups of sugar to one cup of water. Very, very sugary syrup. This is enough that when you leave it in the geode, even if there isn't an air vent for the water to evaporate (which is how a lot of rock candy is formed) there will still be enough sugar when it is deposited. However, it does work best if you can pour it in hot into a heat resistant container... AKA, not chocolate. (= Also, if you want bigger crystals, the best way to get that is to pour the sugar in hot and let it cool down slowly. It will work at bigger, fewer crystals instead of making as many little crystals as possible. It's pretty fun! (I don't claim to be an expert, but this was my science project in 9th grade, so naturally I spent way longer on it than any human reasonable should ;)

You could make synthetic geodes by using concrete or some other sort of rock-type mix, and make a small insertion into the hollow sphere, and then get one of those home cooked crystal kits, and put a bit of that liquid crystal mix and bake them.
