In the UK we remove some leaves and some stalks to expose the celeriac bulbs it helps to swell them up

I think it's good to remove some side leaves of celeriac, to boost the root. And you can always use that leaves and stems in soups or sauce...

Fry diced celeriac with thyme and garlic, it’s really nice. You can also mash with potato
