Growing Salad as a Cover Crop

Cover crops or green manure crops are generally plants that we don’t eat, but there are a lot of fast growing edible crops that could also be used.
It is also possible to sow a salad crop that can serve as a fast growing infill crop, both for harvesting and for producing lots of tender biomass to dig in, or remove for composting.
