Can you explain how you use the cube in mirror mode It's different for me

You have to go to front view add an edge loop, delete the left side, then you add the mirror modifier, and go back to side view to work on the animal.

Whenever I click my faces or my edges to drag them in on my model (like for the head and neck), it drags them in, but creates an indented surface on the front. Why is it doing that?
