If you can spring for an Arduino one, I 100% recommend it. The stock ones are a little tricky to get working nowadays sometimes

Yes! There's a hardware mod called Strumfix that does that, but I've never tried it!

Can you use the hofner on guitar hero games can seem to find a clear answer with my bad searching skills

I have used my Hoffner on Guitar Hero Smash Hits and Band Hero on 360, it worked fine from what I remember. I know for a fact it's universal xinput on PC too, so it works really well for Clone Hero and stuff
