Purple Sweet Potato Harvest: This Store Bought Sweet Potato is AMAZING! Even in the North!
You might be wondering...
Can you grow sweet potatoes in northern states?
Can you grow sweet potatoes from a sweet potatoes?
One of the harvests we have been most excited for this season is this Stokes Purple sweet potato harvest!
We took one store bought organic Stokes sweet potato and propagated enough slips from that one sweet potato to plant an entire 3x6' raised bed. Growing sweet potatoes in raised beds is a great way to get good results, and we really wanted to see how many organic stokes purple sweet potatoes we could grow from this one sweet potato.
In this experiment we also added some hardware cloth to the top of our raised bed to keep the voles out, and the results were that we had no vole damage this time! And, we also got some great sweet potato results. And to make it even better, these purple sweet potatoes contain anthocyanins, which are beneficial for your health!
We hope you enjoy this sweet potato growing experiment, and feel inspired by what you see can be grown from a single sweet potato.

Please do not trash the leaves. In the Philippines we use the leaves to cook along with shrimps, fish etc. It is as healthy as spinach.

Thank you so much! That little bit of hardware cloth took a bit to make it fit perfectly, but it was a real game changer for us. I think we will be adding that to our bigger raised beds in the future as well. Have a wonderful evening!

I also grew purple Stokes this year. They came out long and narrow, also. I like these a lot more than the bigger ones. They are great for roasting.

I roasted some last night for dinner with my container grown Adirondack blue, red pontiac, and yellow fins.... mixed with my homegrown elephant garlic and basil, fennel, parsley, cilantro, dill, oregano, and rosemary and my friend's homemade Lebanese olive oil! All I can say is WOW!! I'm in LOVE❤

I love, love purple sweet potato!! Okinawan being my favourite but can't for the life of me grow them either from slips bought from a reputable nursery, have also tried sprouting them - NADA success. I'm trying Stokes as well as the Japanese purple this year. Will keep you posted on those!

I used Seabird Guano and got about 60 square feet from one spud just by burying the vines as they grew. If you bury a vine it's like a slip.

Very happy to see this!! I just bought my Stokes Purple Sweet potatoes yesterday for my slips- for a ZONE 5 planting later this spring! I am a new gardener- this is only my 2nd year but I am super excited to try growing sweet potatoes! Your video helped me make the final decision that I will be growing them in one of my raised beds, as well as my orange and red sweet potatoes too. Thank you Neighbor! I had sweet potatoes growing in a kiddie pool. Even though I was watering every single day, I couldn’t believe how HARD that soil was. Evidently, we went too heavy with the clay soil input. Even so, I was AMAZED how many and how large were those sweet potatoes! I think those things could grow in cement!

Love the purple stokes sweet potato. We harvested ours about 5 weeks ago and got 15 lbs from 9 slips in a 4 x 4 bed. Thinking maybe we can fit more in based on how you did yours. Needless to say, they are resilient as 6 new vines just popped out of the soil and growing even though the irrigation has been turned off. We will pull them out but it was fun to see. They also tasted delicious! What a wonderful harvest you got.

Same! They are my fave!!! I have them in 5 different containers (3 - 25 gal and 2 - 10 gal) and in a depressed bed out front where we had an old cherry tree that fell over this past winter. I also have some in my experimental raised bed so... SUPER excited for my 1st harvest of sweet potatoes ❤❤❤

Love your channel. I live in the North of England UK 🇬🇧. Its a lot colder than down South but....I've got some sweet potato slips that I'm hoping to grow next year. Fingers crossed they will survive until I can plant them and actually grow potatoes 😁

I’ll be growing sweet potatoes for the first time next year, so what do you think might account for your potatoes growing long and narrow versus being “fatter” like the seed potato you started with? Also, I noticed a number of channels lately discussing the fact that it takes 4 months for bone meal to deliver its full nutrient value to plants. Just wondering if that +/-60 day application is worthwhile? Thanks for your videos! They are the first ones I watch in the morning when taking my dog for a walk because of the information and enthusiasm for gardening you provide

A little late but in case someone else needs the answer. If you want your sweet potato to grow fatter/round instead of skinny and long then the soil needs to be compacted versus loose. If soil is too loose then there's no pressure as they grow deeper (which is natural inclination) so they'll be real skinny. If the soil is compacted, then there's resistance as they grow deeper so they'll expand sideways giving the rounder/fatter shape.

After watching both the planting and the harvest, I would like to see an experiment where you plant slips with just a single node. My guess is that those multiple nodes crowded each other which resulted in long vs rounded potatoes. Thank you for sharing your knowledge, I'm going to pick up this variety - I see online they are gaining popularity and are at some Target and Whole Foods stores.

I love your enthusiasm during your harvest. Your sweet potatoes are skinny. I believed you put too much fertilizer that is why they don't grow bigger and fat like sweet potato should. Less fertilizer is better harvest!

I found that if you just bury one potato the vines will grow and you just bury the vines as they go and wherever the vines touch the ground it makes a "slip". My one potato took over a 30 foot by 6 foot area with twenty 20-gallon bags on Mel's Mix, fertilized with Seabird Guano 2 months before harvest. I got tons of flowers.

Thanks for sharing yet another harvest. I have never tried growing sweet potato yet. I am full of questions. Can you describe the flavor of the Stokes sweet potato? Do you think if you had rooted them before planting they might have been bigger? How about adding heat (maybe clear plastic around the outside of the bed) in the early and late part of the season? Were these just organic sweet potatoes from the store or do they sell seed sweet potatoes? And, last but not least, what do you teach?

You are welcome! It is kind of hard for me to describe the taste of this sweet potato, but I can tell you it is denser than some of the others we grow, and there is a rich taste to it that I really enjoy. We have experimented with rooting, with turning sweet potato slips into "seedlings", and growing this way. I think the difference would likely be a head start for the sweet potatoes, meaning if we rooted them sooner then they would be a week or so ahead on the growing schedule, and in a zone with a short season, that would be some pretty valuable time. As to the plastic, we actually have the outside of the bed wrapped in black plastic for the exact reason you mentioned. We layered the top with black plastic last year, but that wasn't enough to keep the voles out. We couldn't find any stokes slips at the store, and really only stumbled onto this variety because I saw them for sale, but I am sure there must be some place to get a hold of them in slip form. You have great questions! Let me know if you have more. :)

The clay is so challenging at harvest time with sweet potatoes. That really is a prime reason as to why we grow most of our sweet potatoes in raised beds or containers. How did your harvest end up?

I love stokes and definitely do NOT like rubber orange ones. I tried to grow them from slips (which grew fine) in grow bags using soil from Lowes but they all blighted and died slowly. I'm going to give it another try.

Sometimes tubers are sprayed with a chemical which hinder their growth when they are harvested and sent to the store. I know that this is done or garlic and ginger. Rinsing a small sweet potato thoroughly and planting it may be more successful as the small potato will have its own nutrients to support the growth of new sprouts.

@@HepCatJack great info, thanks for that. I started using shade cloth and moved away from grow bags to pots and beds. Here in the Phoenix area it was just too hot to keep them properly watered (I think). Now they're growing like crazy.

Too much nitrogen causes long, skinny tubers like that. Sweet potatoes like less nitrogen, more phosphorus and potassium.
