Very nice, I do pretty much the same as you, so I know I'm headed in the right direction. A thing I do different is after the ice bath, I put the broccoli directly into a large salad spinner and remove the water that way. The broccoli comes out nice and dry. Then I put the broccoli on 1/2 sheet baking trays lined with parchment paper, separated out so they're not touching each other, then into the freezer for 5-6 hours, then into the bag. That way they don't stick together.

Yes, that would not be necessary with store-bought.

Can the frozen broccoli be thawed and used for salads etc or does it have to be steamed/cooked again?

Great question! When it thaws, it will not work well in salads, so I would definitely recommend steaming it to eat after freezing.

Great question! The steaming would kill them for sure, but then they would be stuck in the broccoli, and you would be eating them along with the broccoli. So the purpose of the saltwater soak is to get them to detach and come out.
