Looks great! My parents are Guyanese and the main difference with their recipe is they use Casreep instead of Soy Sauce, and they put a little tomato puree in when frying the chicken.

ChuChuX6 We call it a carahee. It is made out of aluminum (you can find it in other materials I believe). This brand is Caldero. And they can be found at Walmart, Target, Sedanos, online, and any West Indian Store.

ChuChuX6 Casareep is mainly used for giving a dish color (we use it in stews/rice dishes/chowmein/etc). And I use the homemade one from Guyana. I have never used a brand from the stores, but I do recommend it for cooking so you can find a brand that you like.

Looks like cast iron to me. Most guyanese use cast iron (carahee). A nice wok will also do the job well. In Guyana sesame oil and bell peppers are not used. ..at least not traditionally.

@@superiorgundam casareep is made from cassava (yuca). It has a unique flavor and adds color (brown/dark) to the dish. Many Guyanese get the "good" casareep that comes from the interior regions of Guyana. The Guyana and Caribbean markets should carry casareep. No particular brand. Read the label to make sure it's not just burnt sugar.

So, both my parents are Guyanese, but my dad is Chinese... and he's the one who taught me how to cook chow mein. But his chowmein and my aunties' chowmein (who are indian) taste radically different. My dad's chowmein taste like chowmein you can buy at your favorite chinese take out spot. My auntie's chowmein has a very distinct taste that tastes much like the chowmein you can buy at your local roti shop. I have been craving the latter, but I never learned to make it. I spent the last month or so trying to parcel out each flavor in it and i think I found something that works. In addition to all of those ingredients (sans the sesame oil which I am not a huge fan of), add about half a teaspoon of gharam masala, about 1.5 tsp of ground anise .5 tsp of ground clove. And voila. I think it tastes just about right.

It all depends on how much time you have. Sometimes I will season with some ginger and soy or garlic and green and seasoning. I was in a rush this day so I didn't season prior. I will say that once you fry up the chicken with all of the ingredients and spices it takes on all the flavor.

CULANTRO also know and shadonbeni or recao is an herb used in a lot of caribbean and latin cooking. Look it up, you will be pleasantly surprised it is DIFFERENT from cilantro....
