Recipe:
Fried Rice
6 cups cooked white rice (day old)
1/4 cup soy sauce
1/4 cup oyster sauce
1 Tbs sesame oil
2 Tbs white sugar
4 cloves garlic (minced)
1 Tbs fresh ginger (minced)
4 stalks scallions (finely sliced)
1 cup carrots (small dice)
1 cup bora aka Chinese long beans (small dice)
2 Tbs canola oil
(Salt and Pepper) Optional
Guyanese Red Meat/Char siu
1 lb boneless pork shoulder (sliced thin)
1 packet char siu seasoning mix
2 stalks scallions (smashed)
2 Tbs fresh ginger(smashed)
6 cloves garlic(smashed)
1 Tbs hoisin sauce
-Cook like how you would cook bacon in frying pan or oven.
Chinese Fried Chicken
5 lbs whole chicken
1 Tbs ground Szechuan peppercorns
2 stalks scallions(smashed)
2 Tbs fresh ginger(smashed)
6 cloves garlic(smashed)
2 tsp salt
1 Tbs sesame oil
2 Tbs Chinese cooking wine
1 tsp 5 spice powder
1 Tbs soy sauce
-Steam for 15 to 20min.
-Rest chicken until cool and dry
-Fry at 350F in deep fryer until golden brown or at internal temp of 165F - 170F.
