Like at least one other person here said, I think there should be an option for the colors to combine. If they are truly of the same density and same material type but different colors, then they should mix like paints normally do. If they are of different density, like mixing oil and water, then the oil comes on top and separates from the water.

really makes me wonder why blender fluid sims take forever to simulate but this runs real-time and seems pretty accurate (fluid stays correctly inside of the colliders etc.)

Im self-taught over the period of ~5 years (though you could probably learn in less by reading and watching tutorials). Having a friend group around the same level can help too since they can explain concepts that you may not understand. (and vise versa)
