Improvising over Gypsy Jazz
Rather than using scale patterns (like we do in rock solos) we tend much more towards using arpeggios over Gypsy Jazz chord progressions. These arpeggios are played in a typical manner.
Still there are some scales which can create that typical Gypsy Jazz sound. One of them is the minor scale and the other one is the harmonic minor scale (especially over dominant and diminished chords) .
The Dominant Phrygian scale
If we play a E harmonic minor scale over the dominant B7 chord, we're creating the B dominant phrygian scale by starting the E harmonic minor scale on the note B.
In other words: the B dominant phrygian scale is the 5th mode of the E harmonic minor scale.
The same effect is created over the D#dim chord,
because B7 and D#dim7 are very much related..
The Diminished Arpeggio
Over the D#dim7 chord and over the dominant B7 chord we can use the diminished arpeggio.
This arpeggio consists of the 4 notes from the D#dim7 chord and you can start the arpeggio on any of those 4 notes.

Simply playing these arpeggios up and down won't generate a Gypsy Jazz sound. First of all try to make rhythmic figures and let the arpeggios flow into the diminished arpeggio over the next diminished or dominant chord.
Achieving a more Gypsy sound
There are lots of ways to create the gypsy sound and you'll find an equal amount of amazing tutorials on KZbin. Check them out if you're interested (see description).
Still I want to give you some modest starting points.
Alternative starting point for the diminished arpeggio
In Gypsy Jazz it's common practice to start the diminished arpeggio on the root of the dominant chord.
Over a dominant chord in E minor start the D#dim7 arpeggio on the note B (root of the Vth degree).
Chromatic approach for the diminished arpeggio
Like we just saw, over the dominant chord we can start the diminished arpeggio on the root of that dominant chord.
Typical in the Gypsy Style is to start with playing around this root note of the dominant chord with two chromatic notes.

Sounds great, good fun to play around with, however it feels more reggae than gypsy jazz, but still appreciated.

I picked up a trombone student who is just starting out and I wanted to demonstrate how quickly one can go from learning scales to improvising- this is the perfect format for showing that transition. I feel it's important to teach that learning can be fun and not so threatening.
