I’m doing something very similar for our inaugural Boxing Day feast at our new house this year. I’ve just sourced 10kg of pork and lamb shoulders and have my kick arse put ready to go. My inspiration comes from some Greeks I know In Melbourne. The pork mixed in with the lamb gives it a lot of fat which tastes bloody amazing.

That's the expensive version near tourist areas, typical gyros in Greece is actually pork or chicken, sometimes beef or other meats in grill restaurants going for a more refined or gourmet menu. Other than that, most greek bbq recipes like gyros aren't heavy on spices, they focus on herbs without going overboard.

@@quarantinaakalillian7359 This isn't a true Greek gyro. It's made from pork and definitely we do not use those seasonings. This is 100% a fancy version. If your family came here from villages in the mainland, you would understand. If anything I would mix lamb in, maybe with some layers of fat if vertical rotisserie. I'm not sure if this will work on an infrared gas gas grill rotisserie, hence why I'm here.

@@troymuni6120 Actually, back when lamb was cheaper than pork, gyros was commonly lamb (lots of sheep herders & sheepfolds at the time). Nowadays, there's only a few places with lamb gyro that aren't in Thrace or the usual tourist trap islands.

Pretty much perfect. I would suggest de-seeding the red chili and just using two or three, which provides more chili flavor without the irritating nature of the chemicals in chili seeds. Another thing I would do is make a Romain and onion, Arabic salad with sumac, and dress it with lemon and olive oil, which kills any bacteria that are on raw leaves. Other than that the meat was definitely a work of art. Nice job.

Normally also add either tomato paste or red pepper paste and a 1 tbs of Greek yogurt to combine all of it on the meat. Only thing missing to make it perfect. Oh, & fresh garlic not dried!

Why does everyone do lamb gyros? I spent a week in Athens last summer, not one single restaurant served lamb gyros- they were all pork. I love lamb, and before visiting Greece I thought that’s what gyros were. Now I know better, and am richer for it. Pork gyros are the bomb. But these look amazing.

Matt Davis they serve pork instead of lamb because it’s cheap but souvlaki was Porco and gyros were lamb for as long as I grew up in Park Ex in Montreal where I went to school with 2500 Greeks Peace

It is not greek, we do not use lamb for gyros. Islam uses lamb as an alternative but it doesnt relate with us the Hellenics and lamb has totally different taste from what we call as gyros. Original gyros is with pork, the last 20 years we also use chiken gyros and the last 5 years but its not that a trend... Beef gyros.
