Hi, why do you use cardboard in the pan? You fit in yourself, any thickness, won't it get burnt?

奶油遇冷会凝固,需要比较注意其它食材的温度配合。不然容易消泡哦~

Hello, thank you for posting this lovely recipe! I just had a few questions about the meringue. When you first turned on the stand mixer, did you start at a low setting then turn it up to a 4 setting? How long did you mix it for before it reached soft peaks? Was it 1 or 1.5 minutes? Also, does it make a huge difference if the cake is steamed during the baking process instead of using a water bath?

Hi, you can use 6 ~8 speed mix about 15~20 seconds starting add sugar slowly. Mix until you see a very soft peak (Maybe mix 2 minutes, keep eye on it and stop to check) then use 4 speed to mix 1.5~2 minutes . That the meringue should look good. I find that water bath the cake button always too wet to me. On the rack with some steam is just right.

hi reese :) why are you not adding a baking powder? and why youre using lemon juice instead of cream of tartar? whats the difference maam?

If doing all the steps righ, It is not that necessary to use baking powder. And use lemon juice instead of cream of tartar works really fine. So trying to keep the natural way here🙂

The acid will make the egg white stable, you can also use vinegar or cream of tartar instead.
