It is normal because the surface gets moisture, that's why the surface is always placed as a base while decorating the cake.

Thank you for the recipe! I’ve tried to make it and every time I take it to cool out from the oven, the edges of the cake shrink in. Is it because of the change in temperature?

Hi Lisa, I tried this recipe today and it tasted delicious, the only problem was that the sesame seemed to sink to the bottom, which leave a layer of sesame at the bottom of the sponge. do you have any idea why that is? TIA

Did you use sesame powder or sesame seeds? If it sinks, probably the cake batter is a little defoaming.

Yes, you can use mix all purpose flour and corn starch with the ratio of 5: 1 instead of cake flour. If you use only all purpose flour, the cake will be slightly dense and less fluffy.

Sis Lisa..as for the homemade grounded sesame, only 10gm is needed instead of 20gm? Is it alright if I omit the 3gm corn flour?

Is there any sugar add to the homemade sesame powder? if not, please add some sugar as the pure sesame powder taste a little bitter. You can omit the 3gm corn flour in the egg white, but it is better to add a bit of corn flour in the egg yolk mixture, otherwise the egg yolk mixture won't be that thick. The sesame powder I bought from the supermarket contains ground sesame, sugar and setting agent.
I'm going to make this cake tomorrow. Can I reduce the sugar in the cake? I saw that many other recipes use baking powder but yours doesn't. So I shouldn't expect the cake to rise much, right?

This cake is called chiffon cake which is risen by the aeration of beating egg whites, no chemical leavening agents are needed. t can be very fluffy and soft. If you've never made chiffon cake before, follow each step of the video. Enjoy baking!

@@evaarty9113 yes, you can add some lemon juice or vanilla extract to get better taste. Keep 25g of sugar minimum for beating the egg whites
