原味麵團Original dough:50~55g each/可做13pcs
• 水磨糯米粉Gluten rice flour(sweet rice flour) 350g
• 水 water 220~230g
• 豬油或大豆油 lard or oil 30g
• 白糖white sugar 3TBSP
板母製作: 取配方的5TBSP糯米粉跟3~4TBSP水混合抓扮成團狀壓扁,放入煮沸熱水內煮至浮起
芋頭麵團Taro dough:70g each/可做18pcs
• 水磨糯米粉 Gluten rice flour(sweet rice flour) 500g
• 水 water 230~260g
• 豬油或大豆油 lard or oil 40g
• 白糖 white sugar 4TBSP
• 芋頭丁或是刨絲 taro (chopped )440g
板母製作: 取配方的4-5TBSP糯米粉跟3~4TBSP水混合抓扮成團狀壓扁,放入煮沸熱水內煮至浮起
內餡Filling:25g each/total可做 30~35 份
• 豬肉minced pork 500g
• 乾菜圃絲unsalty dried radish 150g(乾的)
• 乾香菇 dried shitake 20~30g(泡水軟化切絲)
• 新鮮紅蔥頭或是油蔥酥也可以5~6顆 fresh shallots 4~5 pcs
• 櫻花蝦皮 dried shrimps 20g
• 醬油 soy sauce 8~9 TBSP(可依照喜好調整)
• 糖sugar 4~5 TBSP(可依照喜好調整)
• 白胡椒粉 white pepper powder
• 五香粉 five spice powder
