It was chilly this last little while in Vancouver, so I decided to make some wonton soup. For this easy recipe, you can use either store bought wrappers or even homemade ones which I'll share later this month!
Shrimp Wonton Soup Recipe
Shrimp Paste/Filling
650 to 700 grams Of Medium -Sized White Shrimps (peeled weight 400 grams), shelled & head, reserved for stock
5 to 6 Scallions/Green Onion, chopped
1 Large Egg White
1 tsp Cane Sugar
2 tsp Fish Sauce
A few dashes of White Pepper
A few drizzles of Sesame Oil
2 tsp of Fried Shrimp Oil *Optional
1 tsp Corn Starch
Wonton Wrappers
Some Greens (Choy Sum or Bok Choy)
Stock/Soup
600 grams Chicken Bones or Chicken Legs, blanched
Reserved Fried Shrimp Shells & Heads
10 Cups of Water
A few dashes of White Pepper
Sea Salt, to taste
