Hainanese Chicken Rice, Very Tender Chicken with Fragrant Rice

This recipe has won the approvals of both adults and young children. I have made this recipe so many times for my family and guests. And it never disappoints!
RECIPE
INGREDIENTS
(A) Chicken
5 - 6 Chicken Drumsticks
1 stalk of leek / scallion, cut into 3 inches long
3 slices of ginger
1/2 yellow onion, roughly chopped
1 jug (2.4 liter) of water
1 cucumber
A jug of ice water
(B) Chicken Rice
2 rice cups (1.5 cups) rice, medium or long grain
1 large shallot or 4 small shallots
4 slices of ginger
1 tablespoon of butter
1.5 tablespoon of sesame oil
1 tablespoon of fish sauce
0.5 teaspoon of salt
2 cups (450ml) of chicken soup
(C) Chicken Sauce (Gravy)
1/4 cup of chicken soup
1 tablespoon of sugar
1 tablespoon of sesame oil
1 tablespoon of fish sauce
2 tablespoon of soy sauce
(D) Chicken Soup
Remaining chicken broth
A sprinkle of salt
METHOD
1. How To Cook Chicken: in a pot, add in all Ingredients A except for cucumber and ice water. Cook on medium heat for 25 to 30 minutes or until chicken is thoroughly cooked. Remove the scum from time to time. Once cooked, remove from heat immediately. Place chicken in ice water for at least 5 minutes to prevent from further cooking. This step ensures that chicken is tender. Slice the cucumber and place it on a plate.
2. Chicken Rice: Wash and rinse the uncooked rice. Set aside. Use a knife to finely chop the shallots. Heat up a pan on medium heat and place in the butter. When the butter is half melted, place in the chopped shallots and ginger. Fry for few minutes before adding in the rice, sesame oil, fish sauce and salt. Mix well. Turn off heat and transfer to rice cooker. Add in chicken soup and cook the rice.
3. Chicken Sauce (Gravy): Mix all ingredients C together
4. De-bone the chicken: Use a knife to remove the bones of drumsticks. Slice the chicken meat and place on the plate with the sliced cucumber. Pour the gravy (chicken sauce) all over the chicken.
5. Sprinkle a pinch of salt for chicken soup.
6. Serve the chicken with the rice and soup. For a kick of spiciness, serve this dish with chilli sauce. I will be showing how to make this chilli sauce next time.

If you use the broth to cook the rice you dont need Fish sauce taste different .. i wont use Fish sauce .. its not so good
