PUNJABI SAMOSA
INGREDIENTS FOR DOUGH:
• 2 cups All-purpose flour (Maida)
• 1 tbsp Semolina (Rava/Sooji)
• 1 tsp Carom seeds (Ajwain)
• Salt, to taste
• 3 tbsp Ghee
• Cold water, as required
SPECIAL MASALA FOR STUFFING:
• 1 tsp Coriander seeds
• 1 tsp Fennel seeds
• 1 tsp Cumin seeds
FOR STUFFING:
• 1 tbsp Oil
• Special masala (prepared earlier)
• 1 tbsp Ginger paste
• 1 tbsp Green chili paste
• 1/3 cup Boiled green peas
• 1 cup Boiled and chopped potatoes
• 1 tbsp Dried fenugreek leaves (Kasuri Methi)
• 1 tsp Aamchur powder
• Salt, to taste
• 1/2 tsp Turmeric powder
• 1 tsp Red chili powder
• 1/2 tsp Garam masala
• Chopped coriander leaves
METHOD FOR DOUGH:
• In a bowl, combine the all-purpose flour, semolina, carom seeds, ghee, and salt. Mix well.
• Gradually add cold water and knead into a medium-soft dough.
• Cover the dough and let it rest for 10-15 minutes.
FOR SPECIAL MASALA:
• In a mortar and pestle, add coriander seeds, fennel seeds, and cumin seeds.
• Grind them thoroughly until they form a fine powder.
FOR STUFFING:
• Heat oil in a pan.
• Once the oil is hot, add the special masala, ginger paste, and green chili paste. Mix well.
• Add boiled green peas and chopped potatoes to the pan. Mix thoroughly.
• Add dried fenugreek leaves, chaat masala, salt, turmeric powder, red chili powder, and garam masala. Mix everything well.
• Finally, add chopped coriander leaves and mix again.
FOR ASSEMBLING SAMOSAS:
• Divide the dough into small portions and roll each portion into a round ball.
• Roll each ball into a round flat disc (like a roti).
• Cut each disc in half to create two semicircles.
• Take one semicircle and fold it into a cone shape.
• Fill the cone with the prepared stuffing and seal the edges to form a triangular samosa. Repeat with the remaining dough and stuffing.
FOR FRYING:
• Heat oil in a pan until it’s hot.
• Carefully add the prepared samosas to the hot oil.
• Fry the samosas on both sides until they are golden brown.
• Remove the samosas from the oil and place them in a serving bowl.
