@@MiddleEats , It’s clear that you’re not simply adapting someone’s recipe to suit you...so I think hearing about your process in researching and reverse engineering these creations would be fascinating to your viewers and for the book you intend to write. To my mind, Middle Eastern and Indian cuisines are the most complex in the world and your journey is worth documenting here and for later use. My appreciation to both of you!

Ah well maybe my wife and I could do a video on that. I guess we'd have to figure out how we could blog it, because most of it is googling or watching dozens of recipes in Arabic. Of course there are the dozen failures in-between, such as when the cheese dough turned into hard leather 😅. We'll definitely keep our minds open to doing that soon!

@@MiddleEats Fantastic idea. If she were agreeable, a 2-4 minute segment where you both made observations about the recipe-taste, texture and any mutual efforts in formulating the recipe would be amusing and informative about the final product. It would replace your normal taste segment and would relieve the pressure on you to express satisfaction during the tasting segment (as if that ever could be an issue, lol). Just some thoughts. No reply needed.

Good idea, I'll definitely consider that. Maybe we should do it with something we haven't eaten before. The only issue I have is I'd need to write subtitles for the sources, since most of them are Arabic videos. Thanks for the ideas

I had a piece the other day from an Arabic sweet shop here in Fairfield in Sydney. Really delicious. It's great to be living surrounded by Iraqi (mainly Assyrian) places where we can buy Middle Eastern ingredients easily. At one place I counted 8 different brands of pomegranate molasses!

No problem, it's actually quite easy to do. We tried a bunch of recipes where the cheese seized up, but this one turned out foolproof. Hope you like it!

@middleeats I've found that a good and quick substitute to making ishta (obviously not as delicious as ishta) is using mascarpone cheese that I sweeten slightly with icing sugar.

There is a Egyptian dessert, I have been looking for on the internet, I can't find it. I think it's called King's Bread or Prince's Bread, it's a dessert, made with wheat, sugar, eggs, orange juice and you serve it with heavy cream. Do you know what this recipe is? You'll find it much easier to avoid making lumps when you stir the milk into the flour if you do it a little at a time instead of dumping all that milk into it at once. Even better, mix the salt and sugar into the flour first. The larger crystals will help keep the finer grains of flour more separated as you add the liquid.

Good point. I actually usually do that with a slurry, but the 8 tbsp felt like a lot of powder to dissolve so I went with 100ml. Thanks for the tips!

@@MiddleEats I'm not arguing about the amount of liquid you mixed directly into the flour. I just mean that you need to add it *slowly* into the flour a splash at a time *while stirring*. Don't just dump the liquid in and then stir afterwards! You can see and break the lumps much more easily while it's at a paste-like consistency, and then it will all smooth out beautifully as you stir in more liquid. But when you add the whole amount of liquid first, the lumps are a bitch and a half to see and pin down because it's so runny. In a way it's similar to the proper technique for adding oil to toum or mayo when mixing those by hand.

I think a direct replacement with the same weight would work. However you will need to soak your akkawi in new water every 6 hours for a full day to remove the extra salt.

What other flavorings could I add? I couldn’t find orange blossom at my store. Would vanilla work well in the dough? Thanks! Also, had to use bread flour bc I couldn’t find semolina either LOL the ashta turned out well though, I have it cooling now!

Rose water or vanilla is fine as a replacement. Regarding the semolina, I have no idea if the dough will work with flour and I kind of feel it will end up with a floury texture. Semolina is a lot more coarse than flour and it doesn't require as much cooking to remove the raw flavour. I'd suggest looking for semolina at a middle Eastern grocery store!
